On Sunday, after all the Easter baskets have been assembled and the eggs have been hidden and found, it will be time to celebrate with a family brunch. Whether you like sweet or savory dishes, there is sure to be something for everyone.
For starters, here are a few ideas to satisfy a variety of palates.
KALUA PIG FRITTATA WITH CARAMELIZED ONIONS
» 3 tablespoons coconut oil, divided
» 1 large sweet local onion, thinly sliced
» 1 red bell pepper, diced
» 2 cups prepared kalua pig, shredded
» 8 eggs, whisked
» 2 tablespoons half-and-half
» Salt and pepper to taste
Heat oven to 325 degrees. In large, ovenproof skillet over medium-low heat, add 2 tablespoons coconut oil and onion; caramelize onion until golden brown (about 10-15 minutes). Remove from pan and set aside.
In same pan, add 1 tablespoon coconut oil and bell pepper. Cook until soft; mix in pork and onions.
Whisk eggs and half-and-half, then pour over pork mixture. Season with salt and pepper. Bake 30 minutes. Rest 5 minutes before serving. Serves 8.

CORNFLAKES CRUSTED FRENCH TOAST
» 3 large eggs
» 1 cup half-and-half
» 3 tablespoons sugar
» 1 tablespoon cinnamon
» 1/2 teaspoon vanilla
» 3 cup cornflakes, crushed slightly
» 1 cup sliced almonds, chopped
» 5 tablespoons butter, divided
» 8 slices sweet bread, 1-inch thick
» 2 bananas, sliced on a diagonal
» 1 cup pure maple syrup
» Zest of 1/2 Meyer lemon
» Pinch of salt
» Powdered sugar
Heat oven to 375 degrees. Whisk eggs, half-and-half, sugar, cinnamon and vanilla. In shallow dish, mix cornflakes and almonds.
In large pan over medium heat, melt 1 tablespoon butter. Dip 2 slices of bread into egg mixture coating both sides, then place each piece into cornflakes mixture, pressing down gently and coating both sides. Place in pan and brown about 3 minutes per side. Transfer to plate and repeat for remaining slices.
Bake coated bread for about 10 minutes to finish cooking and crisping.
Melt remaining tablespoon butter in pan over medium heat; add bananas and caramelize until golden brown. Flip and cook for another 30 seconds; add maple syrup, lemon zest and salt. Reduce heat to low, continue to simmer until syrup is heated through.
To serve, cut each piece of bread diagonally, top with banana syrup and powdered sugar. Serves 8.
