Aina Haina is the home of a new farmers market. On the first and third Tuesdays monthly, Our Farmers Market will set up in the Holy Nativity Church parking lot from 5 to 7:30 p.m.
The market will feature fresh local produce along with food trucks, fresh-pressed juice, plants and local artisans. A keiki station provides some fun for the children. Parking is at the Osco Field (behind Starbucks) or at the shopping center.

FRESH LOCAL PAPAYA SALAD

2 cloves garlic
1 to 3 Thai chili peppers, to taste
1 teaspoon sugar
Juice of 1 Meyer lemon
2 tablespoons fish sauce (available in Asian section of markets)
4 cherry tomatoes, sliced in quarters
1/2 pound green papaya, thinly sliced
With wooden mallet, pound garlic with Thai chili peppers.
In small bowl, add garlic mixture, sugar, lemon juice, fish sauce and tomatoes; mix well. Add green papaya. Serves 4.

LOLA’S APPLE ALMANDINE PIE

1/2 cup butter, cut in small cubes
1-1/2 cups unbleached flour
Pinch salt
1 tablespoon organic sugar
» Filling:
1 cup heavy cream
1/3 cup organic sugar
Pinch salt
1/2 cup almond meal
1 large local egg
1 drop almond extract (optional)
1-1/2 large or 3 small apples (Pink Lady or Fuji), cut into cubes
1/4 cup sliced almonds
Heat oven to 375 degrees. Butter and flour 9-inch pie pan; set aside. Mix butter, flour, salt and sugar using fingertips; add a few drops of water as necessary to form a ball. Chill in refrigerator 30 minutes.
For filling, whisk cream, sugar, salt, almond meal, egg and almond extract if using, until well blended.
Roll out dough into 10-by-1/8-inch-thick disk and place in pie pan. Poke holes in dough with fork.
Add apples and pour wet mix over them. Top with sliced almonds. Bake 30 to 40 minutes or until golden brown. Serves 8.
