The Hawaii Kai Lions once again will be flipping flapjacks at their popular Father’s Day Pancake Breakfast benefit Sunday. The 40-year-old fundraiser supports community projects such as the Hawaii Kai Holiday Parade, vision and hearing screening for East Oahu children, the Hawaii Kai Library, Kaiser High School’s Project Graduation and more.
Members will be serving breakfast 6:30 to 10:30 a.m. at Kaiser High, 511 Lunalilo Home Road. Tickets are $6 and can be purchased at the door. Visit hawaiikailions.org or call David Iwana at 224-3258.

Chunky Chuck Roast Barbecue

» 3 pounds chuck roast, cut into 1-1/2-inch chunks
» 2 teaspoons salt and pepper mixture, or to taste
» 1/4 cup flour
» 1 large round white onion, cut into chunks and separated
Sauce:
» 3/4 cup ketchup
» 6 tablespoons low-sodium soy sauce
» 1/2 cup water
» 1/2 cup honey
» 2 tablespoons apple cider vinegar
» 2 tablespoons Worcestershire sauce
» 5 cloves garlic, minced
Heat oven to 350 degrees. Coat meat in salt and pepper mixture and flour; set aside.
In small bowl, mix sauce ingredients. Pour about 1/2 cup sauce on bottom of baking pan. Place meat and onions on top of sauce, then top with remaining sauce.
Cover and bake about 2-1/2 hours or until meat is tender. Serves 8.

Creamsicle Cake

» 1 (18.5-ounce) box white cake mix with pudding
» 1 (3-ounce) box orange gelatin
» 1 cup boiling water
» 1/2 cup cold water
Frosting:
» 1 (3-ounce) box instant vanilla pudding
» 1 cup low-fat milk
» 1 (8-ounce) container frozen nondairy whipped topping
» 1 teaspoon vanilla
» 1 teaspoon orange extract
Bake cake according to box directions.
In small bowl, dissolve orange gelatin in boiling water, then add cold water; cool and set aside.
Poke holes in the cake using the large end of a chopstick. Spoon gelatin over cake and into holes. Refrigerate at least 2 to 4 hours.
For frosting, beat pudding and milk until thickened. Mix in whipped topping, vanilla and orange extract until well blended. Frost chilled cake and refrigerate. Serves 24.
