This week’s recipe has been passed down from MCC member Diane N.’s grandmother. It brings back fond memories of baking and eating with her during their summers together.

Pinwheel icebox cookies

Ingredients:
• 1/2 cup butter, softened
• 1 cup sugar
• 1 egg
• 1 teaspoon vanilla
• 1 3/4 cup bread flour, sifted
• 2 teaspoons baking powder, sifted
• 1 ounce unsweetened chocolate, melted and cooled
Directions:
In bowl of an electric mixer, add butter and sugar; mix until light and fluffy. Mix in egg and vanilla, then flour and baking powder. Divide dough in half; return one half to mixer and beat in chocolate until combined. Chill dough for 30 minutes.
Roll plain and chocolate dough separately to a thickness of 1/6 of an inch. Place plain dough over chocolate dough, then roll layers like a jellyroll; do not use additional flour. Cover roll in wax paper and chill for 24 hours.
Heat oven to 400 degrees. Cut roll into 1/4-inch slices; place on greased baking sheet. Bake 10 minutes. Makes 2 dozen cookies.
