Christmas in Hawaii is unique with our special island flavors and cuisines. Food is one of our favorite ways to gather with friends and family, especially during the Christmas season. This week, try some of these popular potluck dishes to take to your next gathering.
TERIYAKI MEATBALLS

>> Nonstick cooking spray
>> 1 pound ground beef
>> 1 pound ground pork
>> 1/2 cup panko
>> 2 large egg yolks
>> 2 green onions, thinly sliced
>> 2 cloves garlic, pressed
>> 1 tablespoon grated ginger
>> 1 teaspoon low-sodium shoyu
>> 1/2 teaspoon pepper
>> Sliced green onions and sesame seeds, for garnish
Sauce:
>> 1 tablespoon cornstarch
>> 1-1/4 cups water, divided
>> 1/4 cup low-sodium shoyu
>> 1/4 cup packed brown sugar
>> 1-1/2 teaspoons grated ginger
>> 2 cloves garlic, pressed
>> 2 tablespoons honey
Heat oven to 400 degrees. Coat cooling rack with nonstick spray. Place on baking sheet; set aside.
In a large bowl, place beef, pork, panko, yolks, green onions, garlic, ginger, shoyu and pepper. Stir until well combined.
Roll mixture into 1-1/2-inch meatballs (about 40).
Place on prepared rack and bake until cooked through, about 20 to 25 minutes.
To make sauce, in a small bowl, whisk together cornstarch and 1/4 cup water; set aside. In a small saucepan over medium, add shoyu, brown sugar, ginger, garlic, honey and 1 cup water; bring to a simmer. Stir in cornstarch mixture until thickened, about 2 minutes.
Serve meatballs immediately with sauce. Garnish with green onions and sesame seeds. Serves 8.

STUFFED SALMON WITH CRABMEAT

>> 1/2 large onion, chopped
>> 2 tablespoons mayonnaise
>> 2 cloves garlic, minced
>> 2 tablespoons chopped fresh parsley, plus more for garnish
>> 1 tablespoon lemon juice
>> 1 teaspoon Old Bay seasoning
>> 1/2 pound lump crab meat
>> 2 pounds salmon fillets
>> 2 tablespoons butter, melted
>> 2 teaspoons lemon zest
>> Sea salt and black pepper, to taste
Heat oven to 400 degrees. Line a baking sheet with parchment paper.
In a pan over medium, saute onion until translucent and browned, about 7 to 10 minutes.
Meanwhile, whisk together the mayonnaise, garlic, parsley, lemon juice and Old Bay seasoning. Stir in sauteed onion. Gently fold in crab, being careful not to break up lumps.
Place salmon on baking sheet. Arrange crab mixture lengthwise down the middle of the salmon. Starting from the thinner edge of the fillet, fold in half.
In a small bowl, whisk together butter and lemon zest. Brush lemon butter on salmon. Lightly sprinkle with sea salt and black pepper.
Bake 16 to 20 minutes, until the fish flakes easily with a fork. Garnish with fresh parsley. Serves 8.

TAEGU OCEAN SOBA SALAD

>> 1 (10.58-ounce) package soba (Japanese buckwheat noodles), cooked according to package directions
>> 6 ounces seasoned taegu (Korean spicy codfish; available at the seafood counter at most supermarkets)
>> 1/2 pound seasoned ocean salad (available at the seafood counter at most supermarkets)
>> 1 pound imitation crabmeat, shredded
>> 2 Japanese cucumbers, julienned
>> 1/4 cup furikake (seasoned Japanese seaweed), or to taste
>> Chopped green onions, for garnish
Dressing:
>> 1/2 cup low-sodium shoyu
>> 1/3 cup rice wine vinegar
>> 1/3 cup vegetable oil
>> 1/4 cup local honey
>> 1/4 cup sugar
>> 1 tablespoon sesame seed oil
>> 2 teaspoons sesame seeds, toasted
In medium bowl, combine dressing ingredients; set aside.
In a large bowl; combine soba, taegu, ocean salad, crabmeat and cucumbers. To serve, toss with furikake and dressing; garnish with green onions. Serves 10.
