Though perhaps not a traditional Korean dish, this salad of lettuce with a tasty Korean dressing is refreshing and delicious. Use romaine, red leaf, butter or Manoa lettuces.
The recipe, featured in “A Korean Kitchen” by Joan Namkoong, comes from chef On Jin Kim.
LETTUCE WITH HOT CHILI DRESSING

- 1 head red, butter, Manoa or baby romaine lettuce
- 2 tablespoons shoyu
- 2 tablespoons vinegar
- 2 tablespoons water
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon crushed sesame seed
- 1/2 teaspoon kochu karu (chili pepper powder)
Wash and dry lettuce, then tear into bite-size pieces and place in bowl.
Combine remaining ingredients and mix well. Just before serving, pour dressing over lettuce and toss gently. Serves 6.
