This tart, fruity treat offers a unique option on the dessert table of any gathering, thanks to Muriel Miura, author of “Celebrating in Hawai‘i.”
Guava Bars
- >> Crust:
- 1 cup flour
- 1 teaspoon baking soda
- 2-1/4 cups quick-cooking oatmeal
- 1 cup brown sugar, packed
- 1 cup butter or margarine, melted
- >> Filling:
- 4 eggs, beaten slightly
- 1-1/4 cups sugar
- 1/2 cup frozen guava juice concentrate, thawed
- 1/2 teaspoon fresh lemon juice
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- Powdered sugar
Heat oven to 350 degrees.
For crust, mix flour, baking soda, oatmeal and brown sugar. Add butter and toss to blend everything thoroughly. Press into lightly greased 9-by-13-by-2-inch pan, building up sides slightly. Bake 20 to 25 minutes. Set aside.
To make filling: Beat eggs, add sugar, and guava and lemon juices. In a separate bowl, mix flour, baking powder and salt. Add to liquid mixture. Pour filling over crust and bake 25 to 30 minutes or until filling is set.
Sprinkle with powdered sugar. Cut into bars. Makes about 24 bars.
