It’s almost 2019, a time to celebrate, reflect and make our resolutions for the new year!
There’s a good chance one of your pledges will be to eat healthier, so get a jump start with these tasty appetizers that are fresh and healthier than the typical deep-fried pupu.
TOFU ROLLS WITH PEANUT SAUCE
By Hawaiian Electric Co.
- 1 (8-ounce) package rice sticks
- 2 tablespoons canola oil
- 2 heaping tablespoons minced garlic
- 1/2 medium onion, thinly sliced
- 1 heaping tablespoon minced lemon grass
- 2 generous tablespoons oyster sauce
- 2 pieces atsuage (deep-fried tofu), cut in 1/4-inch strips
- 8 rice paper wrappers (12-inch rounds)
- 1 cup warm water (in a large bowl)
- 1 head iceberg lettuce, shredded
- 1 carrot, peeled and shredded
- 1 cucumber, cut into 1/4-inch strips, 3 inches long
- 1 (10-ounce) package bean sprouts
- Handful fresh mint leaves
- Peanut sauce (recipe below)
Soak rice sticks in boiling water for 5 minutes. Rinse in cold water; drain. Set aside.
In a frying pan on medium-high, heat oil. Add garlic, onions, lemon grass, oyster sauce and tofu. Cook until onion is translucent. Set aside.
Dip rice paper into warm water. Quickly remove and lay flat on a clean, damp towel with sticky side down. Place some lettuce on bottom third of wrapper. Top with some rice sticks, carrots, cucumber and bean sprouts.
In middle of wrapper, arrange 2 strips tofu, mint leaves, and 2 more strips of tofu. Roll wrapper halfway. Fold both sides of wrapper over filling and continue to roll until fully sealed. Keep covered with a damp towel. To serve, slice each roll diagonally in half and arrange on serving platter. Serve with peanut sauce. Serves 16.

PEANUT SAUCE

- 4 generous tablespoons hoisin sauce
- 1/2 cup water
- 2 generous tablespoons creamy peanut butter
- 1 tablespoon sugar
- 1 small red chili pepper, seeded and minced
- 2 teaspoons canola oil
- 1 tablespoon minced garlic
- 1 tablespoon cornstarch, mixed with water into slurry
- 2 tablespoons minced roasted peanuts (optional)
In small bowl, mix hoisin, water and peanut butter until creamy. Add sugar and chili pepper.
Heat oil in a small saucepan; add garlic. Add peanut butter mixture and bring to boil. Thicken with cornstarch slurry; cool. Sprinkle with peanuts. Makes about 1 cup.

TURKEY LETTUCE WRAPS

- 1 pound ground turkey
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons shoyu
- 1 tablespoon brown sugar
- 1/4 cup chopped green onions
- 3/4 cup bean sprouts
- 1/2 cup chopped mint leaves
- 1 head butter lettuce, or any leaf lettuce
In a medium saucepan on medium-high heat, saute ground turkey. Add garlic, ginger, shoyu, brown sugar, green onions and bean sprouts. Cook 7 minutes, or until garlic is soft.
Stir in mint leaves. Transfer to shallow dish. Remove core from lettuce; separate, wash and dry leaves.
To serve, wrap a spoonful of filling with a lettuce leaf. Serves 6.

SPICY MISO EDAMAME

- 1/2 pound frozen edamame (in shells)
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 2 tablespoons chili paste
- 1 tablespoon miso paste
- 1 tablespoon chili flakes
Prepare edamame according to package instructions. Transfer to a big bowl.
In a small frying pan on medium, heat oil. Add garlic and chili paste, cook until combined and fragrant. Add miso and mix 1 minute.
Remove from heat and pour miso mixture over edamame; toss to coat. Sprinkle with chili flakes. Serve immediately. Serves 2.
