Halloween is just a week away, so it’s time to start planning what treats to share with family and friends.
Some suggestions: Goblin Eyeballs are a savory treat with a fiery Sriracha punch; Sweet and Spicy Pumpkin Seeds are a perfect balance of flavors that make good use of the seeds from your just-carved jack-o’-lantern; Oreo Chocolate Chunk Cookies bake up in a large batch — perfect for classroom or neighborhood parties.
GOBLIN CHEESE PUFF EYEBALLS

- 1/2 cup (1 stick) unsalted butter
- 1 cup water
- 1/2 teaspoon kosher salt
- 1 cup all-purpose flour
- 4 eggs
- 1/4 teaspoon pepper
- 4 ounces Gruyere cheese, coarsely grated
- 1 cup cream cheese
- 2 Japanese cucumbers, sliced
- 1 jar pimiento-stuffed olives
- Sriracha or ketchup, for decorating
Heat oven to 425 degrees. Line 2 large baking sheets with parchment.
In a medium saucepan on medium heat, combine butter, water and salt; bring to a boil. Add flour and stir vigorously until mixture comes together and looks smooth and shiny, about 1 minute. Transfer to a large bowl and let sit until no longer hot to the touch, about 15 minutes.
Add eggs, one at a time, and beat until mixture comes together and is smooth. Add pepper and cheese; mix.
Using a 1-tablespoon scoop, drop small balls 2 inches apart on baking sheet. Bake 10 minutes, then rotate pans top to bottom and front to back. Reduce heat to 350 degrees and continue baking until light golden brown, another 12-17 minutes. Transfer to a wire rack to cool.
To make eyeballs, use cream cheese as glue to stick slices of cucumber and olives on top of each puff. Squeeze lines out of Sriracha or ketchup to make the eyes bloodshot. Serves 12.

SWEET AND SPICY PUMPKIN SEEDS

- 5 tablespoons sugar, divided
- 1/4 teaspoon EACH ground cumin, cinnamon, ginger and cayenne pepper
- 2 cups raw whole pumpkin seeds, washed and dried
- Cooking spray
- 2 teaspoons salt, or to taste
- 1 tablespoon olive oil
Heat oven to 300 degrees. Line baking sheet with parchment.
In a large bowl, stir 3 tablespoons sugar with spices; set aside.
Place pumpkin seeds on prepared baking sheet, spray with cooking spray and sprinkle with salt. Bake 20-25 minutes, until lightly golden.
In a large skillet over medium, heat oil. Stir in toasted pumpkin seeds and remaining sugar. Cook and stir until sugar forms a coating on seeds, 2-3 minutes. Stir seeds into bowl of sugar-spice mixture and toss to coat; let cool. Serves 8.

OREO CHOCOLATE CHUNK COOKIES

- 1 cup butter (2 sticks), softened
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2-1/2 cups all-purpose flour
- 3/4 cup Dutch-processed cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white chocolate baking chips, chopped
- 1 cup semisweet chocolate chips, chopped
- 1 cup chopped Oreo cookies (about 10 cookies)
- 1 (1.55 ounces) Hershey’s Cookies ‘n’ Creme candy bar, chopped
Heat oven to 375 degrees. Line baking sheets with parchment.
In a large bowl, cream butter and sugars until fluffy. Beat in eggs and vanilla.
In another large bowl, whisk flour, cocoa, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients. Drop by tablespoons 2 inches apart onto baking sheets. Bake 6-8 minutes or until set. Cool 1 minute, then remove to wire racks to cool completely. Makes about 8 dozen.
