One of the prettiest desserts is a simple pie using store-bought ingredients. This old-fashioned dessert probably was invented in the 1950s when Jell-O desserts were the rage.
Sometimes time-tested dishes are the most satisfying. This one combines ice cream, Jell-O and strawberries and uses a purchased pie shell, and garnishes of fresh strawberries and whipped cream.
It does require you to think ahead a few hours as the pie needs to set. Nothing is at all tricky.
A ready-made pie crust is baked and then filled with a combination of strawberry ice cream and strawberry gelatin. Extra gelatin is added to give it a bit more firmness. It is a very refreshing dessert.
EASY FROSTY STRAWBERRY PIE

- 1 (9-inch) deep-dish pastry pie shell
- 14 ounces strawberry ice cream, softened, or vanilla ice cream
- 1 envelope (1/4 ounce) unflavored gelatin
- 1 (3-ounce) package strawberry gelatin (such as Jell-O)
- 1-1/2 cups sliced fresh strawberries or frozen, defrosted berries
- Store-bought whipped cream
- 4 fresh strawberries, halved or sliced, for garnish
Heat oven to 400 degrees. Let frozen pie shell sit at room temperature 15 minutes. Line shell with parchment or foil. Fill with dried beans, rice or baking pellets so pie keeps its shape. Bake 10 to 15 minutes, until light brown.
Cool. Remove paper and beans (beans may be reused).
Let ice cream soften at room temperature about 15 minutes. In a small bowl, mix 3 tablespoons cold water with gelatin. Stir and let thicken 10 minutes.
In large bowl, dissolve gelatin in 1 cup boiling water. Stir until dissolved, about 5 minutes. Add unflavored gelatin mixture and stir.
Add softened ice cream. Refrigerate until slightly thickened, about 15 minutes. Fold in sliced strawberries.
Pour into pie shell. Chill until firm, 1 hour or even overnight.
Cut into 8 or 12 slices. Garnish with whipped cream and strawberries. Serves 8 to 12.
