Take a culinary journey along the Spice Route at Lyon Arboretum with chef Vikrant Bhasin, who will present the spices of Mexico and the Caribbean in January, and North Africa in February.
Get generous tastings of the areas’ cuisines when Bhasin, chef-manager at Kaiser Moanalua Medical Center, demonstrates flavorful recipes.
The classes are a continuation of a four-part series held earlier this year.

>> Mexico and Caribbean (1 to 3 p.m. Jan. 7): Think cumin, oregano, allspice, cinnamon, garlic, chilies, vanilla and nutmeg, to season such dishes as Jamaican Jerk Chicken, Arroz Amarillo con Sofrito and Gazpacho Salad. The class includes a lesson on the origins and techniques of jerk cooking. And when it’s time to sit down, there will be a beer tasting as well.

Shigekane rejoins Chef Mavro
Jeremy Shigekane is back at Chef Mavro after a brief departure, now carrying the title of executive chef. His return comes as chef Jonathan Mizukami has left to open his own restaurant.
Shigekane, a graduate of Mililani High School and the California Culinary Academy in San Francisco, served as chef de cuisine at Chef Mavro from 2014-15, until leaving for a position as executive sous-chef at the Royal Hawaiian hotel.
“Jeremy is a man of few words, which balances me perfectly,” George Mavrothalassitis, garrulous chef-owner of Chef Mavro, said in a statement.
Shigekane began his career at the Ritz Carlton Half Moon Bay in California, then moved to New York to work in chef David Bouley’s Bouley restaurant, Gray Kunz’s Cafe Gray and Fulton Restaurant, then returning to Hawaii to serve as chef de cuisine at Hoku’s at the Kahala Resort.
