The new Redfish, opening in Salt at Our Kakaako on Thursday, bills itself as a “poke bar by Foodland,” but don’t let that description lead you astray.
Redfish — named for the color of top-quality ahi — is a full-service, sit-down restaurant with a full bar, and despite the connection to Foodland, you’re not going to find groceries here.
Poke was the “inspiration point” for Redfish, says Keoni Chang, the grocery chain’s chief food officer. But when planning began two years ago, “we asked ourselves, ‘How do we take our poke and leverage that in a way that’s not tied to the supermarket?’”
While there is a takeout poke bar (custom bowls with two dozen poke choices, and about the same number of options for toppings and sauces), the sit-down menu includes burgers, brushetta, entree-size salads and such specialties as kalua pork fried rice.
The idea, Chang said, is to offer a quick meal, small bites at the bar or full sit-down dinners. “Well meet you where you’re at.”
One key point: Redfish vows that says only fresh ahi, no frozen, will be used in its eight types of ahi poke.
Redfish is Foodland’s first foray into full restaurant service, after introducing self-serve delis and cocktail bars at its Foodland Farms stores in Ala Moana and Pearl City.
Prices at Redfish run from $8 for okonomiyaki fries to $16 for pulehu short ribs. Poke bowls start at $11.
