Pay tribute to St. Patrick’s Day with corned beef, but instead of investing hours in the usual braised dinner, try this super-easy snack using canned corned beef hash.
Vicki Owens of Kailua can have this dish ready in under three minutes, simply warming the corned beef in the microwave with a bit of olive oil and feta cheese.
“Somehow, the feta goes really well with the hash,” she says.
Owens has tried various brands of canned corned beef, but prefers the Libby’s brand.
It’s a salty, savory dish, so you may want to enjoy it with pasta, bread or rice. Or how about toast and an egg? And perhaps serve it with Guinness Stout.
CORNED BEEF HASH AND FETA CHEESE MELT

- 1/3 (15-ounce) can corned-beef hash, Libby’s brand preferred
- 1/2 teaspoon olive oil
- 3 tablespoons crumbled feta cheese
Put hash in a microwaveable bowl. Drizzle olive oil over the top and sprinkle with crumbled feta cheese. Microwave on high 3 minutes.
If hash is not hot enough microwave again until heated through and feta is melted. Eat as is or serve with pasta, bread or rice. Serves 1.
Approximate nutritional information, per serving: 230 calories, 17 g total fat, 8 g saturated fat, 55 mg cholesterol, 650 mg sodium, 9 g carbohydrate, no fiber, 2 g sugar, 12 g protein.
