ANUHEA’S FURIKAKE SALMON

- 2-pound piece salmon
- 1/4 cup furikake
- 2 tablespoons prepared wasabi
- 2 cups mayonnaise
- Fresh cilantro, for garnish
>> Sauce:
- 1 cup shoyu
- 1/8 cup sugar
- 1 tablespoon minced ginger
Heat oven to 350 degrees. Lightly grease baking pan and lay salmon on it, skin side down. Sprinkle with furikake.
In bowl, combine wasabi and mayonnaise and mix well. Spread over salmon; cover entire fish. Bake 20-25 minutes or until salmon is cooked through — do not overcook.
>> To make sauce: In small pot, combine shoyu, sugar and ginger; cook over medium heat until sugar is dissolved. Remove from heat.
Place salmon on serving dish and drench with sauce, or serve sauce on the side. Garnish with cilantro sprigs. Serves 4.
