The beloved flavor of passionfruit, or lilikoi, flavors this spice cake, featured in “Celebrating in Hawai‘i: Favorite Recipes for Holidays and Special Occasions” (Mutual Publishing) by longtime local cooking expert Muriel Miura.
LILIKOI SPICE CAKE

- 3 cups cake flour
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon allspice
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup butter or margarine, softened
- 2 cups sugar
- 4 egg yolks
- 1/2 cup lilikoi concentrate
- 1/2 cup water
- 4 egg whites
Heat oven to 350 degrees. In medium bowl, sift together flour, cinnamon, cloves, allspice, baking powder and baking soda; set aside.
Thoroughly cream butter or margarine with sugar until light and fluffy. Add yolks, one at a time, beating well after each addition. Add flour mixture alternately with lilikoi concentrate and water, starting and ending with flour.
Beat egg whites until stiff but not dry. Fold batter into whites.
Pour into two 9-inch greased cake pans. Bake 35 to 40 minutes. Frost with Liliko‘i Fluff Frosting (recipe below). Serves 8.
LILIKOI FLUFF FROSTING

- 2 egg whites
- 1 cup sugar
- 1/4 teaspoon salt
- 1/3 cup lilikoi concentrate
- 1/3 cup water
In large saucepan, combine ingredients. Beat mixture 1 minute with mixer. Cook, beating constantly, until frosting forms stiff peaks, about 7 to 10 minutes. Makes enough frosting for an 8-inch layer cake.
