Local boy Frank Abraham, producer of the television show “Cooking Hawaiian Style” on the Lifestyle Network, loves sharing favorite local recipes with Hawaii expats. Here Abraham contributes his take on a particularly local-style chicken preparation.
- 1-1/2 cups guava jam (not jelly)
- 1/4 cup ketchup
- 3 tablespoons butter, melted
- 1/2 cup shoyu
- 1/2 cup oyster sauce
- 1/4 tablespoon Chinese five-spice
- 1 teaspoon Hawaiian salt
- 1 clove garlic
- 3 to 4 pounds boneless chicken thighs
Heat guava jam in microwave for 30 to 45 seconds. Carefully remove and pour into large glass bowl.
Add ketchup, butter, shoyu, oyster sauce, five- spice, salt and garlic; mix well. Add chicken and transfer to zip-top bag.
Marinate overnight. Cook chicken on grill and baste while cooking for 15 to 20 minutes. Serves 4.
