Lorna K. Hu shares her mother-in-law’s beloved sparerib recipe that she said “has been a loving reminder of all the special memories and fun we have shared together.” Hu contributed the recipe to the “Hawai‘i’s ‘Ohana Cookbook” collection.
- 5 pounds barbecue ribs or chicken pieces
- Large piece ginger
- 3 to 4 cloves garlic
- Green onions
- >> Sauce:
- 1 cup white sugar
- 1 cup ketchup
- 3/4 cup shoyu
- 1/4 cup oyster sauce
Boil ribs with ginger and garlic until tender. Drain water. Place ribs on baking pan.
Combine sauce ingredients and pour over ribs, then broil until golden brown.
To make with chicken, heat oven to 350 degrees. Place chicken on prepared baking sheet and cover with sauce. Bake 45 minutes. Serves 6.
