In Hawaii, it doesn’t matter whether what you have is modest or abundant, simple or fancy. What you have, you share. And that’s the concept of ROCKsalt, a new signature restaurant at the Sheraton Maui Resort & Spa.
Executive chef Lyndon Honda and crew have created a globally inspired menu comprising all manner of plates — big, small, pupu, dessert — each meant for sharing.
Dishes marry products from Hawaii farms with eclectic spices to offer a range of fresh selections, such as kombu-cured Hawaiian kampachi with carrot dashi, pickled limu and lotus root; sweet potatoes with pickled mustard seeds, creme fraiche and baby arugula; and poi doughnuts dressed with salted lilikoi caramel.
The restaurant also features a cocktail program, extensive wine list and craft beer selections that complement the menu.
