Pizza is one of those meals that children of all ages like to create. Homemade pizza can be most delicious with pride of creation.
Have a make-your-own-pizza party by putting out an array of ingredients and letting your family create pizzas the easy way. Here is a recipe that is simple yet results in a colorful dish that is tasty and will make your whole family smile.
Sohrab Dorabji of Keauhou, on Hawaii island, frequently makes this pizza with a variety of toppings using a pizza stone placed in his electric barbecue. His method does not require making your own pizza dough or even buying ready-made dough.
Instead, use miniature or regular-size naan bread, available in traditional grocery stores and club stores. The bread freezes well, so you can make pizza anytime.
Before adding toppings, heat the bread so it is stiff and can hold the ingredients. Buy the best cherry tomatoes you can find, as they will have the most flavor. Add just a touch of red chili flakes and bake in a high, 400-degree oven. I find that 15 minutes does the trick to cook the tomatoes slightly and merge all the flavors.
Top with a drizzle of olive oil and whole or sliced sweet basil leaves, and your fresh pizza is done. Enjoy your easy-kine eats.
NAAN PIZZA

- 1 miniature naan bread
- 3/4 cup halved cherry tomatoes
- 1/4 teaspoon red pepper flakes
- Anchovies or anchovy paste (optional)
- 1 teaspoon olive oil
- 4 basil leaves, whole or sliced
- Parmesan cheese, whole anchovies, fresh basil leaves (optional), for garnish
Heat oven or grill to 400 degrees. Heat a pizza stone, if you have one, or use a cookie sheet.
Roast naan on pizza stone 5 minutes so the bread is firm.
Place tomatoes cut-side down so they don’t roll off the bread. Sprinkle with pepper flakes and anchovies if desired. Place on pizza stone in oven for 15 minutes, until tomatoes are slightly wilted and crust is crisp.
Drizzle with olive oil, basil leaves and other garnishes as desired. Serve immediately. Serves 1.

VARIATIONS
Instead of the tomato topping, add:
>> 3/4 cup marinated artichoke hearts, drained
>> 1 tablespoon chopped anchovies or anchovy paste
>> 2 teaspoons grated or shaved Parmesan cheese
>> 1/4 teaspoon dried oregano
Additional toppings could include fresh mushrooms with truffle oil; sliced onions; a raw egg; or pepperoni, salami, ham or cooked Italian sausage.
You could also use mozzarella cheese instead of Parmesan and experiment with your favorite vegetables.
