What’s better than bacon? Spam with bacon, as in the SPAMLT, a BLT (bacon, lettuce and tomato) slider with a slice of the canned meat added in. Everything sits on a sweet roll and is topped with spicy Volcanic Aioli, a mix of mayo, Sriracha, garlic chili paste and sesame oil.
That dish comes courtesy of isle chef Adam Tabura, who will be demonstrating the dish Saturday at the University of Hawaii football game at Aloha Stadium. See him from 2 to 6 p.m. along with the Spamerican food truck that has been touring the country.
The SPAMLT was one of the winning dishes on the fourth season of “The Great Food Truck Race” in 2013, when Tabura, his brother Lanai and buddy Shawn Felipe won that competition in their Aloha Plate Food Truck. Tabura was the culinary mastermind behind the truck’s menu.
The Spamerican truck will be parked at the Rice Festival on Sept. 25. Other stops include Longs Waipahu, Sunday; Costco Iwilei, Monday; Times Kaneohe, Sept. 18; Sam’s Club Pearl City, Sept. 21; Safeway Ewa Beach, Sept. 24; Don Quijote Waipahu, Sept. 29; Eat the Street in Honolulu, Sept. 30; and Tamura’s Waianae, Oct. 1.

Ready, set, go sign up! Kapiolani Community College has just released its coveted lineup of public cooking classes. They start this week and run through December.
On the roster: chef Grant Sato’s basic knife skills, Okinawan and Korean cooking; Fortuna Cooley’s comfort foods; Alyssa Moreau’s healthful cuisine; lots of David Brown’s baking classes; a spotlight on coffee; and, new to the lineup, chef Salvo Coppola, who brings his expertise in Italian cuisine.
