About the business: Founded in 2011 by Carl Chang and operated by California-based Cotti Foods, Pieology offers an interactive and personalized experience.
The already popular restaurant is the first of 20 expected to populate the island in the next three to five years. It adds to the bustle of Aina Haina Shopping Center, where crowds tripled national opening-day numbers in February and continued to fill the space through May.
The craze has subsided to a steady stream of visitors, and even during busy times customers usually wait no more than 10 minutes for their orders to come up. What more could a starving pizza lover ask for?
Eat in, with about a dozen tables available at the restaurant, or take out.
How to order: While Pieology offers signature pizzas, the charm of the place is a make-your-own concept.
First, select the crust for your 11-1/2-inch pizza. Selections include white, whole wheat and gluten free ($2 more), with all the dough made in-house. Next is a decision on sauces: Will it be House Red, 3-Cheese Alfredo, herb butter, olive oil, Fiery Buffalo, pesto or BBQ?
A wide array of toppings is visible along a long counter. Make your picks as the staff assembles your pie. Consider: mozzarella, ricotta, Parmesan, feta or Gorgonzola cheese; meats such as pepperoni, sausage, meatball, Canadian bacon, bacon, chicken and spicy chicken, and local favorites kalua pig, Spam and Portuguese sausage; and a long list of veggies and other toppings that include black and Kalamata olives, mushrooms, red onions, green peppers, artichokes, garlic, pineapple, jalapenos, corn, cilantro, spinach, banana peppers, basil, grape tomatoes and roasted red peppers.
If that isn’t enough, there are accompanying sauces for dipping or drizzling: pesto, BBQ, House Red and Fiery Buffalo.
Prices: The best part of all this is that except for a basic cheese pizza at $8.95, every pie, no matter the amount of toppings, is $10.95.
What else to order: Signature offerings include a meat- centric option called Mad to Meat You, a classic margherita and a buffalo chicken. Especially popular are Alfredo’s Alfredo, an assemblage of three-cheese Alfredo sauce, Parmesan, mozzarella, garlic, mushrooms, artichokes, basil, tomatoes and black pepper; Rustic Veggie; and Hickory BBQ Chicken.
In addition to pizzas, Pieology offers custom salads for $7.95, with selections of greens, cheeses and meats, fresh produce, toppings and a variety of dressings. Side salads go for $4.25.
Wash it all down with fountain drinks, local craft beer and wine by the glass.

Parking: Though the shopping center is hopping with activity, there’s usually ample parking.
