‘What’s cooking Hawaii?’: Egg frittata

COURTESY KCC

Chef-host Grant Sato delves into the world of eggs, demonstrating the proper ways to cook them. See him execute perfect soft-, medium- and hard-boiled eggs and various pan-fried preparations. Then he demonstrates a simple egg frittata, perfect for a Mother’s Day brunch.

  • 1 tablespoon vegetable oil
  • 1/2 cup small diced ham or sausage
  • 1/2 cup small diced onion
  • 1/4 cup small-diced red bell pepper
  • 1/4 cup small-diced green bell pepper
  • 3 eggs, scrambled
  • 1/2 cup salsa
  • 2 tablespoons sour cream

Heat oven to 350 degrees. In small, ovenproof pan on high, add oil. When pan lightly smokes, add ham and vegetables. Saute 1 minute.

Add eggs and remove from heat.

Place pan in oven 6 to 8 minutes. Check for doneness by piercing center of frittata with tip of a knife or skewer.

Remove pan from oven. Place a plate over pan and invert. Frittata should fall right out. Top with salsa and sour cream. Serves 2.
