Australian chef Bill Granger has opened his latest restaurant, bills, in Waikiki.
Granger’s brand of "modern, casual" dining, which he likened to California cuisine, has become an international sensation since he opened his first restaurant in Sydney nearly 20 years ago. He now has restaurants in Japan where the wait to get in is reportedly two to three hours every day and London, and will be opening restaurants in Seoul later this year. The two-story restaurant, which seats about 50 in the downstairs cafe and another 150 to 175 upstairs, offers breakfast, lunch and dinner.
Granger, an art-school dropout, calls his cuisine "simple, home-style cooking," not surprising since he is completely self-trained. He didn’t even learn from his mother, who he said "was not interested in cooking."
He’s especially known for his scrambled eggs, which he said take less than a minute to prepare and yet have earned plaudits from both The and London Times. Other breakfast specialities include ricotta hot cakes, sweet corn fritters and baked items, which are prepared in-house. Another speciality is his chicken schnitzel, which is served for lunch and dinner, and a kim chee rice inspired by local food that has taken hold at some of his other restaurants.
Prices are moderate. Other than wine, the priciest item on the menu is $32 for a 10-ounce rib-eye steak, with the next highest item at $22 for grilled pork ribs. Bills, at 280 Beach Walk, serves breakfast from 7 a.m., lunch from 11 a.m. and dinner from 5 p.m.
