At Jade Dynasty, that means frequent travel to China to keep up with emerging trends in the nation’s diverse cuisine.

The Ala Moana Center restaurant is rolling out new dishes, and a recent dim sum outing meant trying some new specialties such as a fried chive dumpling colored green with chive juice, pork stomach prepared to mimic the soft crunch of jellyfish with a touch of wasabi for heat, and dessert of ginger tofu with soft tofu made fresh in house each morning, setting just in time for the lunch crowd.
