Hawaii folks delivered again: Thanks in part to the voting public, Randolf Florendo and his healthful crab sandwich recipe took top honors — and $5,000 — in the Stealthily Simple category of Arnold, Brownberry and Oroweat Breads’ Better Sandwich Contest.
The Waianae Intermediate and High School teacher had his eye on the $25,000 grand prize, but he isn’t complaining.
"I have no idea what I’ll do (with the money). It’s just a surprise," he said. "I guess I’ll pay some bills and give some to the team." That would be his school’s wrestling team, which he coaches. This was the first time Florendo, 44, ever entered a contest, though he’s been cooking since he was a child. He whipped up the recipe using just five ingredients: bread, crab, red bell peppers, avocado and hummus.
And he’s decided to continue competing. He plans to enter the sandwich contest again next year in another category. Until then he’ll develop his chops.
"There’s a soup one coming up that has a $10,000 first prize. Then there are waffle and pizza contests in the next month or so," he said.
