Hawaii’s high school and college culinary programs do a stellar job of educating students about the importance of supporting local farmers, and Kapiolani Community College, which presents this cooking show, is no exception.
This week’s installment features products from Aloun Farm in Kapolei. The farm is known for growing sweet Ewa onions, and the following recipe plays to the strength of the local product
EWA SWEET ONION JAM
1/4 cup salad oil
» 3 onions, julienned
» 2 tablespoons butter
» 1/2 cup beef stock
» 1/2 cup red wine vinegar
» 1/2 cup brown sugar
On high, heat large pan and add oil. When lightly smoking, add half of onions and saute until caramelized. Add butter and remaining onions, and saute another minute.
Deglaze with stock and wine, stirring well and scraping bottom of pan to remove brown bits. Add sugar and reduce heat to low, then simmer until nearly all the liquid is evaporated. Set aside to cool 10 minutes.
Place contents of pan in food processor and puree until smooth. Store chilled. Use on sandwiches, burgers and hot dogs. Makes 4 cups.
