Roast veggies for ono dishes
One way to turn no-veggie folks into veggie fans is to serve them roasted vegetables. Castle’s Wellness Center, which offers classes on vegan cooking, takes that concept one step further in a "Versatile Vegetables" demonstration on May 23.
The hour-long, 6 p.m. class will offer three ways to prepare roasted veggies. Students will taste dishes and take home recipes.
The wellness center is on the Castle campus. Cost is $10. Make reservations at least two days in advance; call 263-5400 or visit castlemed.org.
