The sixth Ruby Tuesday in Hawaii will open in a different location in Kapolei Commons than originally planned, later than the originally planned time frame of the middle of this year.
"The new one is going to be a stand-alone … on the Home Depot side of Denny’s," said Ruby Tuesday Hawaii co-owner Rick Nakashima.
The complex’s tenant mix also includes Target and Sports Authority.
The 5,400-square-foot eatery will include 1,000 square feet of lanai seating for open-air dining.
It was to have been in a "strip" sort of arrangement under a previous agreement, prior to a change of plans, Nakashima said.
He and partner Ted Davenport are happy with locations as long as "the parking’s good and people can get in and out," Nakashima said. Parking for the prior location also was favorable, he said.
As for the timeline, "we’re drawing right now," which will be followed by permitting, and construction should begin early next year, with the restaurant opening tentatively set for late in the second quarter.
The area has "good mom-and-pops," and even with other chain restaurants such as Chili’s and Outback Steakhouse in the so-called Second City, the Kapolei area is "underserved," Nakashima said. "We really think we’re going to do great over there."
The partners opened their fifth Hawaii Ruby Tuesday in Kihei, Maui, in January, and operates locations at Ala Moana Center, Windward Mall, Moanalua Shopping Center and in Mililani.
