One Honolulu restaurant makes Gayot Top 40
Chef Mavro restaurant is the only Hawaii selection the internationally renowned Gayot dining guide selected for its Top 40 Restaurants in the U.S. for 2015.
One of the cover images chosen for the online guide was Chef Mavro’s poached Taylor Farms Shigoku Oysters on baby leek salad, lemongrass kanten, sriracha trout roe and ogo mignonette.
The restaurant, led by oft-awarded, founding Hawaii Regional Cuisine chef George Mavrothalassitis, is among such lofty restaurant company as Daniel, Jean-Georges, Le Bernardin and Per Se in New York; Alinea in Chicago; The French Laundry, Coi and Saison in California; and Joel Robuchon in Las Vegas, all helmed by world-leading culinary masters.
