For most families, sitting at the table for breakfast has been replaced by eating on the run. But the family can still enjoy a good breakfast — for dinner. Your family gets the best of both worlds: relaxing together at the end of the day, and simple comfort food.
HAM AND CHEESE WAFFLES
1-3/4 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3 large eggs, separated
1 cup (2 sticks) melted butter
1 cup buttermilk
3/4 cup soda water
Nonstick vegetable oil spray
1 cup thinly sliced ham strips
3/4 cup shredded Monterey Jack cheese
Maple syrup
Heat waffle iron on high setting until very hot. In bowl, whisk flour, sugar, baking powder, baking soda and kosher salt; set aside.
Using electric mixer, beat egg whites in a medium bowl until medium-soft peaks form; set aside.
In medium bowl, whisk egg yolks, melted butter, buttermilk and soda water; gradually whisk into dry ingredients. Fold in egg whites.
Coat waffle iron with nonstick spray. Pour batter onto iron, spreading evenly and making sure to coat corners. Scatter 1 tablespoon ham and 1 tablespoon cheese over each waffle.
Cook until golden brown and cooked through; repeat until all batter is used. Serve with butter and warm maple syrup. Serves 4 to 6.

SWEET POTATO HASH
4 cups (about 1 pound) sweet potato, peeled and diced into 3/4-inch cubes
2 cups (about 1/2 pound) red potato, peeled and diced into 3/4-inch cubes
2 tablespoons vegetable oil
1 cup diced ham
1 cup chopped green bell pepper
2/3 cup chopped green onions
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup fat-free, low-sodium chicken broth
1 tablespoon cider vinegar
Place potatoes in large pot and cover with water. Bring to boil, reduce heat, and simmer 5 minutes. Drain and set aside.
In large nonstick skillet over medium heat, heat oil. Add ham; cook 4 minutes, stirring frequently. Add bell pepper and green onions and cook 2 minutes, stirring frequently. Add potatoes, salt and pepper. Cook 4 minutes, gently stirring occasionally.
Stir in broth and vinegar. Toss gently until liquid is absorbed. Serves 4.
